Chicken Marsala, Roasted Asparagus & TBM Quinoa
We returned from spring break travels and I was eager to get back in the kitchen to prepare a home made meal. The chicken marsala is easy, but you will need to allocate more than 1/2 hour for cooking. The asparagus & quinoa is a cinch! Hey, if you are tight on time, prep all of the marsala ingredients ahead of time with your chicken pounded thin, buy the mushrooms pre-sliced, and season the flour in a bowl so that it’s ready for drenching.
