Healthy Breakfast Cookies
This is a guilt-free sweet treat filled with oats, nuts, seeds, and dried fruits. Grab it for a quick breakfast with your coffee or to finish off a meal. This little bite hits the spot and is loaded with goodness.

- 1 tsp cinnamon
- 1/4 cup almond flour
- 1/4 cup sliced almonds
- 1/4 cup dried cherries
- 3 T chia seeds
- 1/2 cup mini vegan chocolate chips
- 1/4 cup pumpkin seeds
- 1/4 cup raisins
- 1 1/4 cup rolled oats
- 1/4 tsp sea salt
- 1/4 cup sesame seeds
- 1/4 cup shredded, unsweetened coconut
- 3 T almond butter
- 1 egg
- 1/2 C maple syrup
- 3 T tahini
- 1 tsp vanilla extract
Preheat oven to 350 degrees and line baking sheet with parchment paper or a silpat.
Mix dry ingredients together in a large bow.
Mix wet ingredients together in a separate bowl.
Pour wet ingredients into dry ingredients and mix together until thoroughly combined.
Scoop evenly sized cookies onto the baking sheet and lightly press down. Bake 12 minutes in 350 degree oven.
Store in airtight container for up to a week or freeze.
