Jacki’s Salmon Patties

So I finally used the fancy Sous Vide machine that my hubby gave me a few years ago and made salmon.  After dinner I was left with very flavorful, moist salmon so I decided to make my mom’s salmon patty recipe.

Jacki's Salmon Patties

This came from leftover sous vide salmon, but you can use any moist left over salmon, roasted salmon or out of a can.

Ingredients

  • 1 pound salmon cooked
  • 2 cups smashed corn flakes
  • 2 cups Siggi's plain greek yogurt
  • 4 eggs
  • 4 egg whites
  • 1 bunch scallions, chopped
  • 1 cup finely chopped dill
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/2 cup chopped cilantro, for garnish
  • Yogurt Dill sauce, for serving

Instructions

1.Mix salmon, corn flakes, plain greek yogurt and eggs, egg whites, scallions and dill together. Season with a little sea salt and freshly ground black pepper.

2.Heat large non stick pan over medium-high heat.

3.Drop batter in hot pan and cook about 2 minutes on each sides so it is golden brown.

4.Serve with cilantro garnish and dill-yogurt sauce.

Notes

To make dill yogurt sauce:

Combine 1 cup plain greek yogurt, 1/2 cup chopped dill, zest + juice of 1 lemon, 1-2 garlic garlic cloves grated, sea salt and freshly ground black pepper,
