Meat the Beet


Grilled New York Strip Steak and Mixed Greens with Baby Beets, Chèvre & Pecans make a simple gourmet dinner, and the leftovers can make a scrumptious steak salad for lunch the next day.  I made a dressed up “garbage salad” by adding some pomegranate seeds,  artichoke hearts, avocado and crumbled goat cheese to the leftovers.  Think out of the icebox and use whatever cut up vegetables or fruits that you have available.  You can easily turn “nothing leftovers” into something delicious by finishing it with a nice vinaigrette.
