Miso Glazed Cod with Broccolini
I decided to get a little saucy and prepared Miso Glazed Cod with roasted Broccolini & Brussels Sprouts (quartered) on a splash of Carrot Ginger Dressing. (note: roast the bloc & sprouts at 400 degrees F for about 15 minutes)
Both the miso glaze and carrot ginger dressings can be prepared ahead of time. This way you can have dinner in less than 30 minutes. Gotta love that!
psst ROASTING notes…to roast veggies, place desired vegetable on a baking sheet, drizzle with olive oil, and sprinkle with kosher salt and freshly ground pepper. roast in a 400 degree F oven until the doneness is “crisp tender” a.k.a. cooked though, but still has a little snap to it/don’t cook until it’s lifeless and dull. (this time varies based on the vegetable and how you cut it.)
