Mushrooms🍄 not only taste delicious, but also have great health benefits.

 

If you missed the mushroom class @chicagobotanic last week, we cooked with 5 varieties of mushrooms that were cultivated on substrate consisting of a mix of kiln dried red oak sawdust and organic soy hulls from @goldengillsmushrooms, and a few versions found in the common supermarket (such as Portobello + Button or White) that are often grown on mushroom compost, which is a mixture of manure (often horse manure) and straw.

 

Here's a glimpse of what we prepared:

 

*BLACK PEARL OYSTER Mushrooms Steamed and finished with Soy Sauce, Sesame Oil + Seeds, Lime Zest and Cilantro

 

*Sourdough Toast with Ricotta, CHESTNUT Mushrooms and rehydrated Porcinis

 

*Sautéed KING OYSTER Mushrooms (prepared as vegetarian scallops)

 

*LIONS MANE Mushrooms roasted with BBQ sauce

 

*Pureed White Beans topped with Crispy Kale and Air Fried PIOPPINO Mushrooms

 

*PORTABELLO Mushroom Caps topped with Tomato, Basil + Mozzarella
