- 1 kohlrabi bulb, peeled and chopped into small pieces
- 1 orange
- 1/4 watermelon, cut into small triangle bites
- 1/2 cup blueberries
- handful fresh mint, chiffonade
- balsamic glaze for drizzling
Immediately after chopping kohlrabi, put in a bowl and squeeze juice of 1/2 an orange over it so it does not brown.
Mix blueberries, kohlrabi with juice and watermelon in a bowl.
Squeeze other half of orange over salad and top with mint. Drizzle with balsamic glaze.
