Greek Chicken Salad with Feta

Yield: 1 serving
- 8 ounces boneless, skinless chicken breast cut into 1" cubes
- 1 lemon
- 1 tablespoon za'ataar seasoning
- sea salt + freshly ground black pepper to taste
- 2 cups lettuce
- 1 persian cucumber, chopped
- 1/2 cup chopped bell peppers
- 1/2 cup chopped cherry tomatoes
- red wine vinegar to taste
Instructions
- Juice lemon into a bowl and add za'ataar seasoning, and a few pinches of sea salt and grinds of freshly ground black pepper. Add chicken and mix together.
- Remove chicken from marinade and bake in air fryer at 400 degrees for 12-15 minutes (internal temp should read 165).
- Mix lettuce and vegetables together in a bowl. Lightly drizzle with red wine vinegar.
- Top with feta cheese and cooked chicken.
