Greek Chicken Salad with Feta

Ingredients

Yield: 1 serving
  • 8 ounces boneless, skinless chicken breast cut into 1" cubes
  • 1 lemon
  • 1 tablespoon za'ataar seasoning
  • sea salt + freshly ground black pepper to taste
  • 2 cups lettuce
  • 1 persian cucumber, chopped
  • 1/2 cup chopped bell peppers
  • 1/2 cup chopped cherry tomatoes
  • red wine vinegar to taste

Instructions

  1. Juice lemon into a bowl and add za'ataar seasoning, and a few pinches of sea salt and grinds of freshly ground black pepper. Add chicken and mix together.
  2. Remove chicken from marinade and bake in air fryer at 400 degrees for 12-15 minutes (internal temp should read 165).
  3. Mix lettuce and vegetables together in a bowl. Lightly drizzle with red wine vinegar.
  4. Top with feta cheese and cooked chicken.
