Ginger Simple Syrup
Simple syrup is basically equal parts water and sugar simmered and reduced to a syrup. This version is flavored with fresh ginger and aromatic spices to give it a zip. It makes the best ginger ale and a marvelous moscow mule cocktail.
Ingredients
- 3 star anise, whole
- 2 tsp cardamom pods, whole
- 2 cinnamon sticks
- 1 tsp cloves, whole
- 1 tsp peppercorns, whole
- 4 ounce piece of fresh ginger, peeled and sliced into rounds
- 1" piece of ginger, grated on microplane
- 1 cup sugar
- 1 cup water
Instructions
Step 1
Toast spices: anise, cardamom, cinnamon, cloves and peppercorns over low heat for a few minutes until fragrant.
Step 2
Put ginger and spices in a small pot, cover with sugar and give it a toss. Pour 1 cup water over and heat over low-flame.
Step 3
Simmer about 15 minutes until liquid has reduced and thickened.
Step 4
Strain through mini mesh sieve and funnel into glass jar.
Notes
Store in refrigerator for 2 weeks.Add 2-3 T syrup to 12 ounces of soda water to make ginger ale.
