Parmesan Crusted Walleye

Yield: 4 servings
- 1.5 lbs (2 filets) walleye pike fish
- Lemon Pepper
- 1/4 C Mayonnaise
- 1 T Dijon Mustard
- 2 T Fresh Dill, chopped
- 2 T Fresh Chives, chopped
- Salt & Pepper
- 1 C Panko Breadcrumbs
- 1/2 C Shredded Parmesan Cheese
- Zest of 1 Lemon
Instructions
Step 1
Season fish with lemon pepper.
Step 2
Combine mayo, mustard, chives and dill. Season with salt & pepper. Spread onto fish evenly.
Step 3
Mix breadcrumbs, parmesan cheese, and lemon zest. Season with salt and pepper. Press breadcrumb mixture onto fish.
Step 4
Bake fish at 350 degrees F for 15-20 minutes. Internal temp should measure 135 degrees.
Step 5
Toast fish under broiler for a minute to get golden brown color, but watch it carefully so it does not burn!
Notes
Short Cut: It can be prepped up to a day ahead of time and stored in the refrigerator. Be certain to bring to room temperature before baking in the oven.
Alternative Method: Use another light white fish such as sole, snapper or white fish. Also try different herbs such as tarragon or cilantro in the mayo.
