Roasted Broccoli, Carrots + Ramps

Ramps are delightful wild leeks that are one of the very first vegetables to emerge in the spring. They have a unique garlic-onion flavor and can be used to make a dish more aromatic or be enjoyed grilled, roasted or sautéed.

Ingredients

Yield: 4 servings
  • 1 bunch of broccoli
  • 6 carrots, peeled & cut on the bias
  • 2 ramps, sliced thinly
  • 1 garlic clove, minced
  • 1 tablespoon za'atar
  • sea salt & freshly ground black pepper to taste
  • 2 tablespoons olive oil

Instructions

Step 1

Cut broccoli stalks into slices and cut florets into bite size pieces.

Step 2

Toss all ingredients together in a large bowl. Spread onto a parchment lined baking sheet.

Step 3

Roast vegetables in 400 degree oven for 15 minutes.


Be careful not to overcook or the broccoli will turn brown and mushy.
