Tarragon Chicken Salad
When you have leftover chicken, make chicken salad. It’s perfect for a picnic. This recipe doesn’t use mayo and the tarragon gives it a unique flavor.

Yield: 6 cups
- 4 C chopped baked oregano-thyme chicken breast [see recipe above]
- 1 C sliced seedless red grapes
- 1 C sliced celery
- 1/2 C raw pecans
- 1/4 C vegenaise
- 1 T dijon mustard
- 2 T chopped tarragon
- a few pinches of freshly ground Black Pepper
Mix vegenaise, dijon mustard and tarragon together in a bowl. Add chicken and mix. Add celery, grapes & pecans and combine evenly.
Think Out of the Ice Box: This is using leftovers to create an entirely new dish. And did I mention it takes less than 10 minutes?!
