Sometime simple is best. Bruschetta is only a few ingredients and can be made in just a few minutes. One bite and you will feel like you are in Italy.

- 2 slices sourdough bread
- 1 garlic clove, grated
- 1/2 cup sliced cherry tomatoes
- 1 small avocado, diced
- 1 T basil chiffonade
- pinch of sea salt
- a few fresh grinds of black pepper
- a few drizzles olive oil
- 1/2 lemon, to squeeze for juice
Toast the sourdough bread.
Gently mix garlic, tomatoes, avocado, basil, sea salt and black pepper.
Divide salad mixture evenly over both pieces of toast. Top with a drizzle of olive oil and squeeze lemon juice.
