Sometime simple is best.  Bruschetta is only a few ingredients and can be made in just a few minutes.  One bite and you will feel like you are in Italy.


This delicious dish is actually toast with a tomato avocado salad on top, but bruschetta sounds so much better.

Yield: 1 serving
  • 2 slices sourdough bread
  • 1 garlic clove, grated
  • 1/2 cup sliced cherry tomatoes
  • 1 small avocado, diced
  • 1 T basil chiffonade
  • pinch of sea salt
  • a few fresh grinds of black pepper
  • a few drizzles olive oil
  • 1/2 lemon, to squeeze for juice


Step 1

Toast the sourdough bread.

Step 2

Gently mix garlic, tomatoes, avocado, basil, sea salt and black pepper.

Step 3

Divide salad mixture evenly over both pieces of toast. Top with a drizzle of olive oil and squeeze lemon juice.
