July 4th is full of friends and BBQ’s…even if it is from a social distance.  Don’t get stuck in the kitchen.  Enjoy your day and know you have a refreshing, light option for your picnic too.  This simple salad is crunchy, juicy and a cinch to prepare.

July 4th is full of friends and BBQ's...even if it is from a social distance.  Don't get stuck in the kitchen.  Enjoy your day and know you have a refreshing, light option for your picnic too.  This simple salad is crunchy, juicy and a cinch to prepare.

Ingredients

Yield: 4 servings
  • 1 kohlrabi bulb, peeled and chopped into small pieces
  • 1 orange
  • 1/4 watermelon, cut into small triangle bites
  • 1/2 cup blueberries
  • handful fresh mint, chiffonade
  • balsamic glaze for drizzling

Instructions

Step 1

Immediately after chopping kohlrabi, put in a bowl and squeeze juice of 1/2 an orange over it so it does not brown.

Step 2

Mix blueberries, kohlrabi with juice and watermelon in a bowl.

Step 3

Squeeze other half of orange over salad and top with mint. Drizzle with balsamic glaze.
