Karen's Coconut Truffles

Guilt free treats from my friend and health coach Karen Malkin.

Yield: 12
  • 1 cup gluten-free oatmeal
  • 1/2 cup unsalted almond butter
  • 2/3 cup raw coconut flakes + extra for coating
  • 1/4 cup chia seeds
  • 1/3 cup dairy-free chocolate chips
  • 1/3 cup grade B maple syrup
  • 1 tsp vanilla extract
  • 1 T cacao powder for coating


Step 1

Mix all ingredients together and refrigerate for 1 hour.

Step 2

Shape into bite size balls and roll in coconut flakes or cacao powder coating.

Step 3

Store in airtight container. Refrigerate for up to 3 days or freeze.
