Turkey Tortilla Wrap
Sometimes you just need to change up your lunch box. Swap out the bread for a corn tortilla and make a wrap in minutes. It can easily be packed in parchment paper to go or eat it open faced on a plate.

Yield: 1 serving
- 1 corn tortilla
- 1 tablespoon hummus
- 1 small beet, peeled & spiralized or shredded
- 1/4 cup arugula
- 3 thin slices of deli turkey
Spread hummus on tortilla and layer beets, arugula and turkey.
Roll up tortilla and wrap in parchment paper to enjoy.
